INGREDIENTS

Servings: 6 people.

  • 2 cups milk
  • Three egg yolks
  • 1 cup Carolino rice (The Native Portuguese Rice, feel free to substitute for another short-grain example Arborio rice)
  • 2 and 1/2 cups water
  • 1/2 teaspoon salt
  • Six slices of lemon zest
  • 1 cup sugar
  • Two cinnamon sticks
  • Powdered Cinnamon

Portuguese Rice Pudding, lemon and cinnamonINSTRUCTIONS

In a pot saucepan, bring the water, cinnamon stick, salt, and lemon peel to a boil. Add rice, bring to a boil and cook on medium heat until all the water has evaporated.

Add the hot milk and cook for at least 25 minutes on low heat, stirring once in a while. Add the sugar, stir and cook for 5 minutes longer. Turn off heat.

Meanwhile, beat egg yolks. Temper the eggs by adding a few tablespoons of the rice mixture and mixing it well. Add the egg yolks into the pot slowly and mix well. Take out the lemon peels and the cinnamon sticks.

Pour into a large serving platter or individual servings and garnish with powdered cinnamon.
